The Antarctic Toothfish is a highly prized catch that is sweet in flavour, delectable and is sustainably fished under the ongoing effective management of Antarctic Toothfish Fisheries and carries the MSC certification. Toothfish has snow-white flesh and is suited to both dry and moist preparations in a broad array of cuisines.
Cut from along the fish clavicle, right behind the gills. The collar runs from top to bottom (including stiff pectoral fins along the way), with especially rich meat along the belly, ending in a little fat cap. The cut is anchored to the collarbone, but once cooked it separates nicely - and with no smaller bones to navigate.
Toothfish is the most exclusive “Big Brother” in the category of fatty white fish. With it’s pure white flesh, high omega-3 content, and large flake, Antarctic Toothfish is a versatile favorite in the kitchen. Because the flesh is meaty and dense, slower cooking methods also work, such as stewing and sauteing.
Toothfish Collars has high fat content, speedy high-heat cooking methods work well, searing the outer surfaces and caramelizing the flesh for greater flavor.
